EASY Dutch Oven White Chicken Chili

This easy dutch oven white chicken chili is delicious and oh-so-simple to make! I love it because it’s perfect for meal prepping or storing away for later (hello moms of littles like me!).
There’s just something about chili, on a cool day that makes it the perfect comfort food. Whether it’s the warmth of the creamy flavors, the fresh taste of the garlic, cumin, and oregano spices, or the ease of whipping it up in an instant pot or dutch oven — it’s a must on my recipe list year-round.

But the best part about this recipe isn’t that it’s easy to make, it’s that my kids absolutely love it, and they’re incredibly picky little toddlers, so I know yours will too.
This easy recipe is also great for postpartum moms or moms who don’t have a lot of time to cook. Why? Because it’s a great way to meal prep on the weekend or put together really quickly after getting home from work. And the other great thing is you can store this recipe in an airtight container in the refrigerator for up to 3 days.
What Ingredients Should I Use for Dutch Oven White Chicken Chili?
Below you will find a list of the 9 simple ingredients used to make this incredibly easy white chicken chili.
Chicken (Chopped or Diced): I prefer to use around 1.5-2 lbs of diced chicken and if I’m really in a pinch, shredded rotisserie chicken works great too!
Onion: You’ll need 1 medium onion for this recipe to really help add more flavor to the chili.
Chopped or diced jalapenos: If you like your food to have an extra spicy kick, add in around 4 oz of diced jalapenos. You can do less or more depending on your preference for spice. I tend to leave them out because I have young kids, but I do enjoy adding a slice or two of jalapenos to my portion.
Randall Great Northern Beans: You’ll need a 48oz Jar of these white beans to beef up the chili (cannellini beans will also work).
Chicken Broth: Use 32oz of store-bought or homemade chicken broth for this recipe.
Cumin & Oregano: You’ll need 2 tbsp of each to give this recipe a boost of flavor.
Diced Garlic: Use 2 tbsp for added flavor.
Shredded cheese: Use around 2 cups of shredded cheese which you’ll mix in at the end. I personally prefer a variation of cheddar cheese, but you can use any kind you’d like! Monterey Jack Cheese is another tasty option!
You might also want to add some toppings at the end. Of course, this is completely optional, but my kids enjoy topping theirs with some tortilla chips, avocado, or a scoop of guacamole, and I personally love cilantro on mine too!
How to Make This Easy Dutch Oven White Chicken Chili
This white chili recipe couldn’t be easier. You can cook it in a dutch oven (which I’ll be walking you through today) or you can use a crockpot slow cooker.
- First, you’ll want to heat a teaspoon of olive oil in a 6-quart dutch oven over medium heat.
- Then, you’ll add in some chopped onion and saute it for approximately 4-6 minutes until lightly brown.
- Once your onion has browned, add in your garlic and saute that for an additional 30 seconds.
- If you’re using raw chopped or diced chicken, now is the time to add it in and saute for 5 -7 minutes. If you’re using cooked shredded chicken, add it later.
- Add and mix in your chicken broth, chopped jalapenos, cumin, and oregano.
- Then, bring all of the ingredients to a boil and reduce the heat to a medium to low setting and let simmer for approximately 12 to 15 minutes.
- Without draining your beans, pour the entire jar of beans into the dutch oven and mix them together.
- You’ll want to continue to simmer the ingredients for another 30-45 minutes on low heat.
- If you opted to use cooked shredded chicken, add in your chicken now and stir well. Then add in your 2 cups of shredded cheese and mix.
- After all the ingredients have been mixed well for ~5 more minutes, your chili is ready to serve!
What If I Like My White Chicken Chili Creamy?
If you prefer to have a thicker creamy chili, you can add in 1 — 8oz package of cream cheese before you add in your beans.
Some recipes utilize heavy cream or pureeing your beans in a food processor, but I prefer to keep it simple by just adding in some cream cheese.
Can I Make This White Chili In A Crockpot?
If you don’t have a dutch oven and want to make this white chicken chili in a crock pot, it’s just as easy! Add your chicken breasts directly into the crock pot, followed by your broth and spices.
Saute your onion and garlic in a small pan and then add them to the crockpot. This will give the chili an extra pop of flavor.
Cook on low for roughly 5 hours. Add in the rest of your ingredients (beans and cheese) and mix well. Let this continue to cook for ~ 30 minutes before serving!
This is the best white chicken chili recipe I’ve ever tried. I’m not a fan of recipes that take too many steps to make because as a busy mom I just don’t have that time.
