Mini Pancake Muffins: Easy Toddler Breakfast Bites

These easy mini pancake muffins are such a hit in our home, especially with my toddlers. I mean what is more fun than bite-sized pancakes, sprinkled with your favorite toppings? The best part is that these easy little breakfast bites (or snack bites) can be prepped and baked in less than 20 minutes. A mom-approved must-have recipe in the home!
Now, if you’re a mom trying to survive the busy mornings like me, you know very well that whipping up a fresh breakfast every morning isn’t always in the cards. That is where these little mini pancake muffin bites come in extra handy.
When I first made this recipe, I kept it very simple. I added some sprinkles, and some blueberries, and another one was just plain. These days, my kids and I get a little more creative by adding things like peanut butter into the actual batter (I’ll share our favorite organic powdered peanut butter by Naked Nutrition that makes this incredibly easy), and even mini chocolate chips!

Can I Serve These Mini Pancake Bites as a Snack?
You absolutely can!
I can’t tell you how many times I have sent my kids to school with these little pancake muffin bites, just for them to come home and tell me they wish I sent them with more. They’re THAT delicious.
What doesn’t taste yummy when it’s shrunken down to be a bite-sized snack? There’s a reason it has become my kids’ favorite pancake recipe.
And in all honestly, I enjoy making these as a quick bite for myself. We’re all familiar with the “I forgot to eat”, because the day is getting ahead of us, and we’re simply too busy to remember to eat. That’s what makes these a great grab and go snack or breakfast.
But the absolute best part of making this pancake muffin recipe is that I get to make them with my kids, and it’s always a memory-building experience. We care out a couple of minutes from our day, we bake some pancake mini muffins together and then get to enjoy them whether in their school lunches, as a snack for myself, or for breakfast.
Supplies Needed for These Mini Pancake Muffins
Before we jump into the recipe, we’ll need to talk about the supplies you will need for this recipe. Fear not, it’s incredibly simple. I’ll also include the supplies and ingredients I used specifically for the recipe I’m sharing today.
Supplies needed:
- Mini Muffin Pan (we prefer silicone pans) or Mini Muffin Tin
- Measuring Cup or Medium Bowl
- Spoon for mixing
- Non-stick cooking oil (if you’re using a muffin tin)
Ingredients needed:
- Pancake Mix
- Powdered Peanut Butter (We love Naked Nutrition’s Organic Powdered Peanut Butter & used it in today’s recipe)
- Pancake Toppings (maple syrup, fresh fruit, cinnamon sugar, mini chocolate chips, and more…)
- Butter (optional)
- Vanilla Extract

Now, when it comes to making these muffins for your kids, the calories don’t matter so much. However, when you’re planning to make them for yourself — you’re going to want ingredients that aren’t loaded with too many sugars and unnecessary calories.
Plus, this powdered peanut butter mixes SO well with almost any recipe, it makes using it effortless.
Mini Pancake Muffins Recipe
Now for the fun part, making your first batch of these delicious mini pancake muffins!
Step 1) Preheat your oven to 350 degrees and spray your muffin tin (if you’re not using a silicone mini muffin pan) with nonstick spray.
Step 2) Prepare your pancake batter by following the instructions on the box. I love adding no more than 1/2 tsp of vanilla extract to my pancakes, it just gives it a little bit more flavor, but if you’re not a fan, feel free to skip that step.
Step 3) Place the silicone muffin tray on a flat baking sheet and fill each muffin tray ~3/4 of the way full and then begin adding on your toppings! My kids even used a small spoon to mix their toppings inside (Personally, I like using a rubber spatula to scrape out all the batter so that none of the batter gets left behind.
Step 4) Put them in the oven and bake for approximately 15 to 20 minutes.
Step 5) Let your mini pancake muffins cool, then serve up and enjoy!
